This outdoor kitchen that I found in Acapulco signifies endurance in so many ways. Tolerance of the smoke in your eyes. Patience as you attempted to control the cooking heat. I wouldn’t trade my kitchen any day. I found this kitchen to be fascinating yet archaic.
We stopped here as part of a swamp tour excursion that we took while in Acapulco, Mexico. They actually cook and serve meals from the kitchen. We only had a short visit so there was not enough time to sample the local cuisine from this restaurant. I bet it would have been a treat to be remembered.
We did have time to sample their home-brew of local mescal… I didn’t partake but did take many photos as my friends indulged, screwing up their faces in grimace… which would be another fun post.

Wow! I can barely cook on my gas range. Would have absolutely NO idea what to do with this one 😉

I’m impressed that they can still use them. They burn wood, right? I’d totally give it a whirl if I had a chance, but like you, I wouldn’t give up my kitchen either. Cleaning my kitchen? I’d happily outsource that. 🙂

I have learned to bake Chicken Burritos Enchilada style using an older Weber grill at my cabin. Even after finishing the cabin and having a great stove/oven I still find myself at the grill most every night. 😀

It is a common cooking method in remote villages in Pakistan where gas is not available.

Thanks for sharing your insight into cooking methods in other countries. I am sure there are areas also in the US where this type of cooking is done too. It still must be difficult to control the heat but as with most anything, you learn how to make it work.
